2018 Sylvie Estate Cabernet Sauvignon
PRE RELEASE OFFERING
The 2018 growing season delivered an even fruit set and a relatively mild summer that allowed a long hang time, ensuring slow, complete fruit development. Dark garnet in color, the wine possesses a captivating energy, wholeness, and power in its youth, as even greater complexity of aromas and flavors will emerge from behind framing tannins over time. The aromas are so beautifully interwoven they’re almost textural: blackcurrant, anise, blackberry, dried thyme, orange peel, and floral notes. In the mouth, blackberry, dark chocolate, wet stone, and pomegranate notes interlay with sweeter hints of clove and vanilla. Big, mouth-filling tannins are youthful and persist through the finish. We recommend additional cellaring for this big vintage with an optimal drinking window of 2024 through 2032. 83 cases crafted.

The rich mouthfeel presents intricate layers of dark chocolate, plummy fruit, and savory/meaty notes of bay, sage, and rosemary. Tannins relax and offer a silky finish.
2016

Aromas of cocoa, cassis, sage, and vanilla notes dance from the glass. The mouth has a light-on-its-feet feel, with brighter cocoa notes, blackcurrant, and rosemary, as youthful tannins persist on the lingering finish.

2017 Sylvie Estate Cabernet Sauvignon
We harvested our acre of vines on September 30th, a light yield of intense, concentrated fruit. The wine is dark ruby-
crimson, brandishing elaborate aromatics of bramble, juniper, dried black cherry, and fig jam with supporting notes of
warm earth, roasted meat, savory Indiana spice, and dried herbs. Consistent with past vintages, 2017 maintains a bright,
lively acidity with great structure — a food lover’s dream cabernet sauvignon. 53 cases crafted.

2016 Sylvie Estate Cabernet Sauvignon
The 2016 vintage was a winemaker’s dream harvest: A strong fruit set preceded even ripening conditions and a near-perfect growing season.
Dark garnet-ruby color, the wine opens with prolific aromas of kirsch, plum preserve, cassis, cocoa, fresh mushrooms, anise, and fenugreek. Molasses, Madagascar vanilla, and easter lily emerge as the wine opens with time in the glass. On the palate, flavors of black cassis, elderberry, raspberry compote, tarragon, sage, and feijoa are supported by ubiquitous silky mouth-filling tannins. Brighter flavors and a lively perception of acidity make this wine a standout with an array of pairing options like creamy pasta with roasted vegetables, anything with mushrooms, or a favorite cut of seared meat. 83 cases crafted.

The 2015 vintage is known for its low yields of rich, concentrated fruit.
The saturated garnet color and purplish-black tones extend to the rim of the glass.
